Stir fry leeks and duck eggs

I remembered the first time eating Stir Fry leek and eggs when my flatmate's mum visited. 
Despite having only two main ingredients, I have managed to stuff up the dish on a couple of occasion.

Today I am pretty satisfied with myself.  I used 2 duck eggs and about 8 inches length of leeks. 
I fry the eggs first and while it's kinda cooking, I threw in the leeks and stir fry.  I only add salt and pepper as my flavouring. 

 
It is good with rice or rice porridge.  Next mission, to cook dried radish with eggs.

Annie's Winter Chewy Slice

This is another recipe from my ex-colleague Annie :)
I am baking them for a work morning tea

tomorrow.

Ingredients:
1 cup of flour
1 tsp baking powder
1 cup of shredded coconut
3 Weetbix (Crushed)
3/4 cup sugar
1 beaten egg
1 large tbsp. of golden syrup
125 g melted butter
1 cup dried fruits (Cranberries, apricots, sultanas- use any combination or just one)

Mix all the dry ingredients together.

Melt the butter  (I microwaved high for 1 minute).  Add Golden syrup and beaten egg and mix then mix well.

Pour into the dry ingredients and combine.

Pour into greased or lined slice tray and press firmly.

Bake at 180degrees Celcius for 20 minutes (I use 160 degrees fan forced and baked for 30 minutes).

Cut while hot.

Super Animal cards -series 2

Guess what, during the first term school holiday (which started from Good Friday) the supermarket had released the animal cards again.

I don't know whether to be happy or not.  My colleague who shops at that supermarket automatically gave me big stacks of cards every Monday.

Series 2 have  72 to collect. We are probably 9 cards away from finishing the collection.

One thing I noticed Abel likes to practice counting on the album.
