Jam and Fruit Loaf for Morning Tea

My workmate brought in a recipe book that belong to his wife's deceased aunt.  It's a pretty old cookbook and it's published back in the days when cookbooks are just list of ingredients with brief instructions and has no pictures.

I picked a loaf recipe and tried it out. I read the recipe a few times to make sure I didn't left out anything.


Here is the recipe:

1 cup sugar
4 oz butter ( After working on the conversion, I replaced with half cup oil)
1/2 cup jam (I used Strawberry jam)
1 cup sultanas
2 Tbsp golden syrup
1 tsp vanilla essence
2 tsp baking soda
1 cup water

Instructions:
Simmer above ingredients 5 minutes stirring all the time.
 
 


Fold 3 and 1/2 cups flour sifted with 1 tsp baking powder.  Bake in loaf tin 350 F for 1 hour.

Note: I used a large silicon loaf tin.  I used temperature 160C on fan bake for 1 hour and 10 minutes (checking to ensure my skewer comes out clean).

 

 
It is a dense loaf when I sliced them it feels a little hard on the crust but still soft in side. I got 12 slices out of the loaf.  
 
 
I buttered my slice and had it with a cup of chai :)
Verdict:   It was well received, by 3 pm, the loaf has been finished.
